CocoNut Granola

 
Super yummy Granola that’s SUGAR FREE!!! That’s right you heard me, sugar free! I got this from iquitsugar.com book by the beautiful Sarah Wilson! It’s day two on no sugar and I feel great! Check out her website!! This sucker kept me full for hours while I cleaned teeth! IN LOVE!

Ingredients

2 cups mixed nuts [1/2 cup walnuts, 1/2 cup cashews, 1/2 cup pumpkin seeds, 1/2 cup almonds: use all or pick a couple, slightly chopped]

3 cups unsweetened coconut

5-7 Tbls coconut oil

3 Tbls maple syrup [she used brown rice syrup]

2 Tbls chia seeds

1 tsp cinnamon

Optional: 2 cups oats, if so add more oil and syrup [I did 1 and 1/2 cups]

Directions

Combine all ingredients in a bowl, put on parchment paper on top of a  cookie sheet. 

  

Bake for 15-20 minutes in 250 degree oven. Or until crispy, I let mine get nice and brown.

I ate mine with unsweetened coconut milk and topped it with fresh blackberries! It eat with plan Greek yogurt!
