Zucchini Lasagna

Noodle Free Lasagna

Ingredients: (serves 8)

3 zucchini

2 yellow squash

16 oz 2% small curd cottage cheese

1 jar favorite spaghetti sauce

2 lbs. venison or ground beef

2 cloves garlic minced

1 med red pepper diced

3 oz baby spinach

1 c grated mozzarella

2 T coconut oil

2 quart casserole dish

Melt oil and saute onions. Brown the venison in same pan, then add garlic. Then add bell pepper. Meanwhile make the zucchini noodles. Preheat oven to 350 degrees. Spray large baking pan with olive oil or coconut oil spray. Slice, lengthwise, 3/4 in thick, the zucchini/yellow squash. Lay out on pan, bake for 10 min (flexible but not completely cooked), set aside. While the “noodles” are baking, grate the mozzarella cheese and mix with cottage cheese.

To assemble, spread a thing layer of pasta sauce on bottom of baking dish. Put down one layer of zucchini or squash. Then lay down meat mixture, then a cheese mixture, followed by a spinach layer…REPEAT without spinach, end with cheese on top (3 or 4 layers) Bake at 350 degrees, uncovered for 1 hour or until hot and bubbly.
