Salmon and Veggie Quinoa

1-1/2 tsp freshly ground black pepper

1/2 tsp. paprika

1/4 tsp. ground cayenne pepper

1 tsp. minced garlic

1 T. minced onion

1/2 tsp dried thyme

1/4 tsp. salt

2 T. coconut oil or olive oil

2 salmon steaks (1 lb.) 1″ thick

2 c of broccoli

In a bowl stir together all ingredients except the salmon. It will form a paste.  Put the paste on both sides of the salmon steaks.  Heat an oil ridged grill pan over moderately high heat until it is smoking and saute the salmon 3-4 minutes on each side.

Veggie Quinoa

1 cup dry Quinoa

2 cups water

2 T. coconut oil

1/4 of a medium yellow onion

1/2 of a orange or red pepper

1 medium carrot

salt and pepper

To cook quinoa place quinoa and water in a saucepan and bring to a boil.  Reduce to simmer, cover and cook until all the water is absorbed (10-15 minutes).  Meanwhile heat coconut oil in a saute pan and chop onion, pepper and carrot. Add the chopped vegetables to the oil and saute for about 4 minutes.  When the quinoa is cooked stir in the vegetables and season with salt and pepper.

I also steamed some broccoli and added a little butter, salt and pepper to taste for a side dish.
