Mini Cranberry, Dark Chocolate Cookies

My mom made these cookies and got the recipe from “Low-Carbing Among Friends” Volume 1. Maria Emmerich is a God-send with healthy yummy treats, try it yourself and check out her books!

Ingredients [yield 18 cookies]

2 1/4 c almond flour

1/4 c granulated erythritol or Splenda blend

1/2 t baking soda

1/2 t salt

1/2 t xanthan gum

1 large egg, lightly beaten

1/3 c coconut oil, melted

1/2 t vanilla extract

1/2 c dark chocolate chips

1/4 c unsweetened dried cranberries

1/4 c chopped walnuts

Directions
In small bowl, whisk together almond flour, granulated erythritol, baking soda, salt and xanthan gum. In large bowl whisk together egg, coconut. Add almond flour mixture and stir until dough comes together. Stir in chocolate chips, cranberries and walnuts.
Form by hand into 1 inch balls and place 1 inch apart on parchment-lined baking sheet. Flatten with palm to 1/2 inch thickness. Bake in 350 degrees oven 7-10 minutes or until just starting to brown on top. Let cool on pan 5 minutes, then transfer to cool.
